Sounds like we should be running a marathon of Clint Eastwood, Lee Van Cleef movies today! And lots of terrific background music!
Aficionados tend to pooh-pooh Barilla as a brand, but I have been using it for quite a while. Solid stuff and always comes out great. But, for what it's worth, I suggest you make your own sauce. It's not difficult to get something really good from a couple of cans of diced and crushed tomatoes with whatever herbs you like.
Then a red-checked tablecloth with a candle stuck in an old bottle of Chianti, and it's off to the races.
Enjoy the evening!

Garlic bagel, cream cheese, coffee. Rarely have this during the week (veggie/freshly squeezed juice drink guy). Sunday treat.

Sautéd fresh spinach and chopped garlic in a very small combo of water and coconut oil then poured in 3 beaten eggs and scrambled the lot. Seasoned with salt & pepper. Yum. Went a bit heavier on the oil so the eggs wouldn’t stick. Nice light meal.

To me, eggs are something you use to make cakes, cheesecakes or color at Easter then throw out. 👎

Too bad! Tonight it’ll be spaghetti - tomato sauce, ground beef, sausage, onions, mushrooms (one day I’ll master a ragu) and angel hair pasta. Friend gifted me with a bottle of Merlot, which I’m tempted to add to the sauce, though they say a Sangiovese is a better blend. So we may just drink it.

Maybe we should have a thread where everyone has the same dish: Live Chow on Sunday afternoon. Obvious first posts would be Thanksgiving leftovers.

My life is good. Cheese enchiladas? I can't tell. But it looks very good. All I can say is I ordered the Manzanilla plate. I made quick work of it, too, let me tell ya.

The salsa looks fresh. That's my kind of meal!

Dan, my man, you are indeed Lucky!
When we lived in New Hampshire we had one decent Mexican restaurant -- actually got featured on "Restaurant Impossible" and was never the same since.
Now we're in Oklahoma and have all kinds of restaurants all over the place. Too much to choose from sometimes, but that's hardly a complaint! I've noticed around here that they like to put fried eggs on top of things. Puzzling, but it actually works out pretty well!

Remember the scene in Giant where newly-arrived Leslie sat down to her first breakfast at Reatta, an enormous steak with a fried egg on top?
My one wish about Tex-Mex is that it would use less ground beef and more shredded beef. I love the burrito barbacoa at Chipotle for that reason.
If I didn't tell you that at TCM, let me say here, welcome to the Southwest.
